Well, it turns out that less than eight kilometers from Sarrión and with only 24 inhabitants, La Escaleruela is a small municipality where one of the most recognized producers of this luxurious food is located. Perla de Sarrión is a limited company that has been open since 2014, when two Russian businessmen, Nikita Nebylitskiy and Vladimir Kantorovich, set out to treat this fish from this peculiar place.

It turns out that last year alone, Perla de Sarrión generated more than eight tons of caviar. Despite having everything against it, apparently, since a caviar business in the middle of a town of 24 inhabitants is most curious, it turns out that they are doing very well and for a couple of years, production has only been going up. And the product they offer follows slow, quality protocols that position the factory as the fifth largest caviar producer in Europe.

Beyond those processes that take time and time, as Javier Domezain explained, caviar master of Esturión de Sarrión for an interview in El mundo: “each kilo that the fish weighs can mean 10% or 12% of performance.” We may be quite surprised by this small figure, but the fact is that, hence its excessive generic price, because it turns out that a kilo of this delicacy from Sarrión would be equivalent to about 2,000 euros in value of the final product, as the expert has clarified.
