The last one is used to prepare many recipes and since I always have extra, I store it so I always have it available. Until now, when I prepared broth at home, whether vegetable, stew or chicken to make a soup, I always put it in glass jars, but it turns out that I was doing it wrong, or at least not as well as I thought.
Alfredo Vozmediano, a chef who has worked in three Michelin star restaurants such as Noma, Mejorar and Maaemo, is dedicated to training and uses his social networks to share culinary content. According to the chef, “this is the perfect way to store broths at home, and the one used in all restaurants.” What it does is store it in vacuum bags to “maximize order and minimize the space occupied,” but if you don't have a canner, you can use zip bags that close well, the kind sold in any supermarket.

The first thing is to fill them, for which you can use any container and put the bag inside so that everything doesn't spill out. You close it tightly, avoiding air remaining as much as possible (a vacuum sealer is just for that), and “start stacking the broths, putting a piece of baking paper in between so that they don't stick together,” explains Vozmediano.
When the broth has frozen, it will be leaf-shaped, as if it were a sheet of paper, so it can now be stored as if it were book cards in a library. It is important that you always write down the packaging and freezing date and the type of broth it is, whether it is a seafood fumet, a beef broth or a bone broth, whatever, so that you always know well what the package is.
To use it, you just have to take it out of the freezer and you're done. This way, the freezer drawer that used to fit six cans will now fit twice as many. And you will always have homemade broth ready to use in any recipe.
