How to desalt cod like a real chef

Cod is a particularly delicate food, so it is essential to always keep it cold to prevent it from deteriorating and potentially triggering food safety problems. Another important point to keep in mind is that the pieces must be of a more or less similar size so that the desalting process will be uniform. If there is a lot of difference between them, some will be saltier than the rest.

To desalt it correctly, we must take a container with cold water and fill it so that the water has a volume three times that of the fish. This proportion is key because, if there is little water, it will quickly become saturated with salt and the cod will no longer be desalted adequately. Furthermore, we will not arrange the fish pieces randomly in the bowl, but rather place them with the skin facing up to facilitate the expulsion of the salt.

The soaking time always depends on the size of the cod pieces. For medium loins, about 36 hours are usually necessary, changing the water about three times during this process. If the pieces are larger, it will be necessary to extend the time and renew the water more frequently.
