This zucchini and chickpea salad is the perfect complete dish for your healthy meals

Salads are a staple in our dinners, but many times we find it difficult to give a little versatility to these classic recipes that seem to go no further than lettuce, tomatoes and cheese or tuna. The truth is that you can make a salad in countless ways, also adapting them to the cold months. We have come across a TikTok proposal and we have decided to put it to the test. The result is cinematic because in addition to being a super nutritious dish, it is healthy and very easy to make.

The video that inspired us is this one from the @beelfoodana account, where the protagonists are chickpeas and zucchini, a mixture that seems like a great success to us. It is not necessary to prepare a complex spoon dish to make room for these ingredients in our diet, sometimes the simplest options like this are three times as tasty. Take note!

Winter salad ingredients

  • 200g cooked chickpeas
  • 1 or 2 zucchini
  • 4/5 dried tomatoes in oil
  • Anchovies

For the yogurt sauce:

  • A natural Greek yogurt
  • a clove of garlic
  • Zest and juice of half a lemon
  • 1/2 teaspoon herbs (oregano and dill)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

To spice the chickpeas:

  • A teaspoon of curry
  • 1 teaspoon sweet or hot paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 or 2 teaspoons of EVOO

ZUCCINI, CHICKPEA AND YOGURT SAUCE SALAD: INGREDIENTS: – 200g cooked chickpeas – 1 or 2 zucchini – 4/5 dried tomatoes in oil – Anchovies YOGURT SAUCE: – 1 natural Greek yogurt – 1 clove of garlic – Zest and juice of 1/2 lemon – 1/2 tsp herbs (oregano, Provençal dill) – 1/2 tsp salt – 1/2 tsp pepper CHICKPEA SPICES: – 1 tsp curry – 1 tsp sweet or hot paprika – 1/2 tsp salt – 1/2 tsp pepper – 1 or 2 tbsp EVOO RECIPE: – cut your zucchini and pass them through a frying pan with a little evoo for a couple of minutes. – When the zucchini is done, set aside and add the chickpeas with the spices I left above to the same pan. The step by step of the straight

We start the recipe by cutting the zucchini into thin strips and put it in the pan with a splash of virgin olive oil. We let it brown a little for a few minutes and when it is ready we reserve it in a bowl. The next step is to take a jar of chickpeas and wash them well with the help of a strainer, then we put them in the pan over medium heat with EVOO so that they warm up a little and we add a teaspoon of curry, another of sweet or hot paprika, half of salt and half of pepper.

We continue with the yogurt sauce, mixing in a bowl the natural Greek yogurt, a clove of garlic, the zest and juice of half a lemon, half a tablespoon of herbs, a little salt and a pinch of pepper. We stir well so that the flavors blend little by little and once it is ready, we pour the sauce into a bowl and place the zucchini and chickpeas on top. This way you would be ready to enjoy.
