“Sometimes you just need to eat an entire cucumber.” If a recipe starts like this, you've won me over. Logan, a content creator with 7.3M followers on TikTok, went viral last year when he shared his famous cucumber salad with a recipe that began with the phrase, “sometimes you just need to eat a whole cucumber and this is the best way to do it.” Personally, I prefer the version by Jenny Bolle, a Norwegian food content creator who made it much healthier than the original, but still super fast and fun.
Bolle's has cucumber, chili oil, sesame oil, rice vinegar, grated garlic and sesame seeds and although I love that Asian touch, I prefer the version that chef Paula Casado makes. A cucumber salad in a gilda version. The best thing is that after trying it I can assure you that it tastes like Gilda and the concept is hilarious and successful.
For two people (or one very hungry person), you need a Dutch cucumber, some peppers (between 4 and 6, depending on how spicy you like it), some pitted olives (at least a dozen), a small jar of anchovies, a tablespoon of grain mustard and a little soy sauce and olive oil.
We start in the same way, cutting the Dutch cucumber with the help of a mandoline. We could do it with a knife, but the mandolin is one of those small kitchen gadgets that makes your life so much easier that it should be an essential, and on Amazon they have some that don't even cost nine euros. If you are wondering if you can use the ground cucumber (the one we use for gazpacho, which is shorter and with rough skin), the answer is yes, but the recipe changes. The Dutch cucumber has much thinner skin and a less bitter taste and if you want to know, it is mostly from Almería.

We will put the very thin cucumber slices in a jar (make sure it has a lid, we will then cover it to mix it well) in which we will add the chopped peppers and olives, half of the anchovies also chopped with a knife and the anchovy oil. With the leftover anchovies we are going to make a paste, using a knife and the cutting board. You just have to chop it very very finely and when you have it small, crush it on the board with the knife so that a paste forms. When we stir everything, that anchovy paste will give it creaminess and a lot of umami.
We add the pasta along with a teaspoon of old-fashioned mustard, a little bit of soy sauce (one tablespoon is enough as the anchovy already provides saltiness) and a couple of tablespoons of the liquid from the pickled peppers. We add a splash of olive oil, close the jar and stir as if we were in the 'Cocktail' movie. Now you just have to open and eat. Easy dinner, fun appetizer and a perfect recipe to eat more vegetables, but with a touch of gilda. Wonder.
