A few days ago, looking for a little inspiration to start the year with healthy but tasty recipes, I came across this proposal on social media where leek was the main vegetable. The truth is that, beyond its puree version, I had never dared to cook them in any other way, but this way I find it much more appetizing. One in which the touch of pistachio and whipped cheese is key and that has managed to position this dish as one of my essentials for dinners this January. The main reason? It is done in record time and in addition to being healthy, it is to die for. Take note

Ingredients for leeks with whipped cheese

The step by step to achieve a result of ten

The merit of the recipe belongs to the account foodie @paulasapron, which is always a source of inspiration for those of you like me who are quite lazy when it comes to cooking. The thing is that here you find tricks to eat deliciously, but without spending a lot of time between the fires, something that I always appreciate.

To start this leek recipe without using the oven, we start by washing this vegetable and cutting it in half. Once these halves are ready, we open them in the middle, breaking them again, this time vertically. Then we put the pan over high heat and add a splash of virgin olive oil. Once it is hot, we mark the leeks and add half a glass of water. Then we place a lid on the pan and turn the heat to low, allowing them to slowly caramelize.

The next step is the accompaniment, based on pieces of green olive, pistachios, chives and parsley. Everything must be counted in small cubes so that the ingredients are mixed well. Once they are ready, we place them in a bowl and add oil, lemon zest and salt.

We continue with the base of the recipe, which is made with beaten fresh cheese, salt and the juice of half a lemon. Once it is ready, we will plate our mixture and place the leeks on top. Finally, we add the accompaniment on top and our light and healthiest recipe would be ready.
