On days when I've had a more difficult day and I'm lazier to cook, I usually go for a sandwich, I just try to make it as healthy as possible. Eating a sandwich doesn't have to be a bad thing and you can turn them into a nutritious and balanced meal, in addition to the filling, with the bread we use. This is healthy and has a protagonist: zucchini.

This particular bread is low in calories and perfect to replace sliced bread that has little in the way of health. It is a zucchini bread whose main ingredients are zucchini, a low-calorie vegetable; egg, which provides extra protein; and oats, which are a very satiating food with a great protein and fiber content compared to other cereals. How to make a sandwich with zucchini bread
To make this bread we only need 200 grams of zucchini, one egg and three tablespoons of oat flour. We are going to add some spices for flavor, garlic and onion powder and oregano, although you could add turmeric and pepper for an anti-inflammatory effect. The curcumin in turmeric, the element that makes this food anti-inflammatory, is metabolized quickly and is eliminated, limiting the amount that acts in our body and its absorption increases if we add piperine, present in black pepper.

To make the bread we just have to beat all the ingredients with a hand mixer and spread the mixture in a sandwich maker or in a frying pan lightly greased with olive oil. When the dough is cooked on both sides, we fill it as we like and if you want, you can top it off with a couple more minutes in the pan so that the filling is also hot.
You can fill it with whatever you like, it works with everything. For example, we can make a bikini with ham and cheese, but we can also fill it with avocado, lamb's lettuce, tomato and turkey, or make an egg and avocado filling like the one proposed by chef José Andrés.
