Vegetable-based baked fish recipes are one of the best options for eating healthy but without giving up a palatable dish. It is perfect for both a lunch and a light and filling dinner. A dish that couldn't be more of an idea for everyday life because it is practically made by itself in the oven and using very economical fish.
The first thing of all is to preheat the oven to 180 degrees, with heat up and down. Next, we peel the potatoes and cut them into thin slices. Next, we wash and cut the peppers and tomatoes into slices, and the onion into slices. Additionally, we chop the garlic cloves. We reserve.
In an oven-safe dish, pour a quarter of the olive oil (about 12 ml) and spread it over the base of our container. We place the potatoes and the mixed onion and add salt. Only then do we continue placing the tomato slices, the green pepper and the chopped garlic. Finally, we check the salt level and rectify if necessary.
Then, we add the wine, the juice of one lemon and half of the water. We put it in the oven and cook for forty-five minutes, but making sure that the vegetables do not become dry. However, if we see that they dry out, we can add a little more water during cooking.
Finally, on the bed of roasted vegetables, we place the fish (clean and salted) with some lemon slices. Add the rest of the water and bake for fifteen more minutes. We serve while it is still hot.
