Today it is not time to debate whether the best potato omelette has onion or not, although according to data from the Sociological Research Center (CIS) reported by El País, 70.4% of Spaniards choose it with onion. The curious thing is that 53.9% of those surveyed also stated that they preferred the tortilla rare. Today it's time to talk about the danger of eating it like this in summer.
Nutritionist and food technologist Beatriz Robles stated in 'Hora 25' on Cadena Ser that “the poorly set tortilla is a bomb” because the egg, in summer, “is a food that is related to a high number of food poisonings, especially salmonella.” In undercooked potato omelette, as the expert explains, “all the requirements are met for bacteria to reproduce very quickly and cause food poisoning.” The expert recognizes that the slightly curdled potato omelet is tastier and juicier, but also more dangerous.
If we are talking about a rare tortilla, it is essential that it be consumed as soon as it is made, as Robles indicates. Mario Sánchez, a food technologist and popularizer on social networks known as @sefifood, assured that “eating the almost raw, liquid tortilla is like taking a salmonella foam bath,” referring to the Betanzos-style tortilla. The potato omelet is a product that is heated and cooked, that is, it receives a heat treatment that would kill bacteria, but sometimes it does not remain completely set.
“You drink it liquid or undercooked, and this is where the problem is. The temperature in the center of the product that guarantees the safety of the food is not reached,” explains Sánchez. What for some is 'juiciness', for bacteria it is the perfect environment to proliferate according to experts.
Royal Decree 1021/2022 says that fresh eggs can only be used to make omelettes if the center of the product reaches at least 70 degrees for two seconds or 63 degrees for twenty seconds, and as long as it is consumed immediately. That is why when it is not met, you have to use roe. But at home, the danger increases, especially if we use those eggs from the chickens that your neighbor has in town and that have not gone through a supermarket, with the subsequent health controls.
Especially in summer, the safest thing is to eat the tortilla well curdled to avoid a visit to the hospital.
