I never thought about cooking chickpeas and carrots like this: a healthy and simple recipe that is delicious

January is always a month to try new challenges in the kitchen, although if you are like me who primarily looks for simple and healthy recipes that are delicious in a short time, TikTok can become your best friend for this. These days I have saved a couple of dishes that I am looking forward to putting to the test, of course, there is one that I have already cooked and has my approval. It is delicious, it is light and healthy and on top of that it features carrots and chickpeas. It is not a stew or a broth, but a super original proposal where yogurt and feta cheese also have a place.

It has become one of my essentials for the week. Since I saw this video on social networks where Alba Díaz Martín shared her star recipe inspired by one she tried in a restaurant on her TikTok account @albadiazmartin, I confess that I really wanted to put it to the test. It is the most comforting and most important: it does not require you to be an expert in the fire. Girls, it's going to become your new obsession. Take note.

Recipe ingredients

For the carrots:

  • 6 carrots
  • 2 tablespoons olive oil
  • 2 tablespoons agave syrup or honey
  • 1/4 tablespoon garlic powder
  • 1/4 tablespoon sweet paprika
  • Salt to taste

For the chickpeas:

  • 1 jar of chickpeas
  • 2 tablespoons of tomato
  • 1 tablespoon olive oil
  • salt and pepper

To serve:

  • Half cup of Greek yogurt
  • 1/3 feta
  • 1-2 tablespoons tahini
  • 1 tablespoon parsley
  • Olive oil

For the carrot: – 6 carrots – 2 tablespoons of olive oil (I do this by eye) – 2 tablespoons of agave syrup (or honey) – 1/4 tablespoon garlic powder – 1/4 tablespoon sweet paprika – Salt to taste For the chickpeas: – 1 jar of chickpeas – 2 tablespoons of tomato – 1 tablespoon of olive oil – Salt and pepper To serve: – Half a cup of Greek yogurt – 1/3 of feta – 1-2 tablespoons of tahini – 1 tablespoon of parsley – Olive oil (spicy is better) 1. Preheat the oven to 200 and add baking paper to the tray. Add the carrots and season with olive oil, agave syrup (or honey), garlic powder, sweet paprika, and salt to taste. Let it cook for 15 minutes in the oven. 2. Meanwhile, strain the chickpeas and add water. Dry them and put them in a bowl with a tablespoon and a half of tomato, olive oil, salt and pepper 3. When the 15 minutes are up and the carrots have cooked a little, pour the chickpeas into the tray. Let them cook for 20-25 minutes. 4. Once this last step is ready, let it cool for 5-10 minutes. 5. Put a dollop of yogurt on the plate, add the carrots and chickpeas and the rest of the toppings.

The step by step of our carrots with chickpeas

We start by preheating the oven to 200 degrees and putting some parchment paper on the tray. Once the oven is hot, we add the carrots to the tray and season them with a splash of olive oil, a little agave syrup or honey, garlic powder, sweet paprika, and salt to taste. Then we let them cook well for about 15 minutes.

While the carrots are in the oven, we take our jar of chickpeas and a colander and pour a little tap water over them to wash them well. Next, we dry them and place them in a bowl with a tablespoon and a half of tomato, olive oil, salt and pepper. Once the 15 minutes have passed, we add the chickpeas to the oven tray along with the carrots and let everything cook well for about 20 to 25 minutes.

When this time has elapsed, we remove the tray from the oven and let everything cool a little for about 5 or 10 minutes. Then we take a plate and place half a cup of Greek yogurt, a third of feta cheese, a tablespoon of tahini and a tablespoon of parsley. Finally, we place the chickpeas and carrots on top, give it the final touch with a splash of oil and our dish would be ready.
