Two things to keep in mind: it has to be a roscón without filling, and we need to remove the candied fruit and sugar on top so that it is not too sweet. Also, to better balance the flavors and not make it all “bread”, cut it into three parts so that there are two fillings and three breads. As for combinations, an option that I personally really like is bologna mortadella with smoked cheese like scamorza, for example, or idiazabal cheese.
