Grandma Moma, cook: "To make rice with chicken, I first fry the chicken and then add pieces of tomato."

Grandma Moma has her own style for making such a classic and popular recipe as chicken rice. The best thing is that it does not involve a technique that complicates the dish but begins by putting the meat in the oil and then adding the tomato cut into pieces. This is how he explained it on his TikTok account, where he shares the entire process and the ingredients with which he prepares the base. Among them, a paprika whose origin is very clear: “De la Vera. Extremadura”.

As we said, the chicken is the first thing that goes into the casserole, specifically she has opted for sirloins. “First I add the oil, I add the chicken and then on top of the chicken I add the tomato pieces,” he explains in his own words. That order is the detail you have to pay attention to: the chopped tomato is added directly to the meat and in small pieces.

Then comes the turn of the pepper (chopped into pieces) and garlic, along with a little salt and paprika. “And I already do it all together,” says Moma. However, he also insists on the point at which the chicken has to be, which he describes as “well browned and well prepared.” Of course, what it doesn't show is when it adds the rice or how much liquid it uses, so we can proceed following our usual recipe.

What he does mention is bay leaf among the ingredients in his recipe, although he didn't have it that day when he started cooking. Because with cooking grandmothers we already know that there are rarely exact quantities or a stopwatch as part of their explanations. What Moma makes clear with her recipes is that the secret lies in the base of the preparation: chicken first, chopped tomato later and pepper, garlic and paprika cooking together next. To give it color and more flavor, you can add turmeric, but it is optional.
