Finding a good rice pudding is one of those things that brightens your day. It's not that easy, that perfect creaminess is not always present. Because? Because many make the mistake of cooking rice in their own milk. However, the authentic Asturian recipes on TikTok reveal the correct technique: pre-cook the rice in water before pouring it into the milk.

This is the traditional Asturian recipe and is based on the chemical processes of starch. During cooking, water penetrates into the grain and causes gelatinization, responsible for its soft and creamy texture. However, when it is boiled in milk, it has so much fat that it does not penetrate or does so more slowly, so the inside of the grain remains raw.

Being previously hydrated in water, the rice reaches the hot milk with part of the water already absorbed inside the grain, which favors its subsequent gelatinization and the release of starch during cooking. In addition, it is important to boil the rice in the milk over low heat and stirring constantly, to prevent the dairy from burning at the bottom of the pot.

When it is tender, turn off the heat and add the sugar, beginning the cooling process. It is important to wait until the end to add the sugar, because sucrose can delay the hydration of the grain and make the cooking time longer.
