Attention, potato lovers, because from today you are going to have a new favorite recipe to enjoy them. It comes from the hand of Arantza Calle Abad, who on her Instagram profile prepares some curious “patatas meneás”. A simple and super tasty recipe that will make you lick your fingers.

“Patatas meeás” is what the typical potatoes revolconas are known in some places, including Salamanca, and they are called that because in the last step the already mashed potatoes are stirred or stirred with the refried food before adding the bacon in the form of torreznos to give a very tasty and crunchy touch to the dish.

How to prepare revolconas or meneás potatoes

Ingredients

  • 500 grams of potatoes
  • 200 grams of bacon with skin
  • 3 cloves of garlic
  • One and a half tablespoons of sweet paprika
  • Optional: a quarter teaspoon of hot paprika
  • 1 bay leaf
  • Extra virgin olive oil
  • Water
  • Salt to taste

How to make revolconas or meneás potatoes step by step

The first thing we have to do is peel the potatoes and cut them into medium pieces, all the same size. Once this is done, we cover them with water in a saucepan, adding one of the three cloves of garlic that the recipe calls for (already peeled), the bay leaf and a pinch of salt, and we cook the potatoes over medium heat until they are tender (be careful because we are going to have to mash them, so it is important that they are soft: we will have to let them cook for around 25 minutes).

While the potatoes are cooking, we are going to brown the bacon to prepare the tasty torreznos. We place the bacon skin side down in a pan without cutting it, in a single piece, and we cover the entire area of the skin well with oil, which is what has to be crispy and with bubbles. We brown over very slow and gentle heat. Once golden, we cut into pieces.

Don't throw away all the oil you've used: leave about three tablespoons in the pan and add the remaining two cloves of garlic to cook them over low heat. Once the garlic is golden, it is important that we turn off the heat and with the residual heat we will add the sweet and spicy paprika (if we wanted to use it) and stir vigorously with a wooden spoon.

At this point our potatoes will already be done, so we remove the bay leaf, which has already provided its flavor, drain the potatoes and mash them with a fork. We have to have a texture that we can then pick up with the fork without it escaping.

Once this is done, we add the refried sauce that we have prepared and stir the mixture well to achieve a very creamy texture. We can place the torreznos above or below the potatoes, to taste.

A traditional and luxurious recipe to accompany the weekend vermouth or take it as a tapa with a very cold beer. If you prepare it with love we assure you a tremendous success among family and friends.
