A good tortilla skewer has no rival. It is the perfect option for breakfast, lunch and even dinner. Furthermore, when we find a recipe in which the result is not very fruitful, we give in fully to it. A classic is Betanzos which, despite not having onion, has a spectacular flavor. Of course, there is no need to go to Galicia to try it because there is a tavern in Madrid that serves it following the traditional steps and that even Ferran Adrià himself surrenders to it.
“The best I have eaten in years,” said the chef of L'Hospitalet de Llobregat after trying the proposal served at the La Falda tavern, in the heart of Madrid, in the Lavapiés neighborhood. A neighborhood establishment that has not stopped operating and that recently opened another establishment in the Chamberí area, specifically on Ponzano Street.
This place, of course, is not an unknown place and in 2025, La Falda won the National Potato Tortilla Championship award, an award that supports its fame 100%. There, at the head of the business, is Alejandro Oliveira, who, when opening his second location, wanted to preserve the essence of Sylkar, one of the Madrid classics best known for its tortilla.
In both restaurants, the tortilla is always served whole, never in skewer format, and has a price of 18 euros per unit. A perfect option if there are several of you at the table and you want to share this dish. Ferran Adrià recommends it and, in fact, you can add other classics from the menu to your selection such as the belly and octopus salad or the veal sweetbreads with smoked eel and foie reduction. Of course, you can't leave without trying the star dessert: cheesecake.
