Although many of us associate sweeter snacks with snacks, the truth is that there are salty dishes that can be a great way to kill the itch in the middle of the afternoon. Angelita Alfaro, chef and author from Rioja, has many ideas in her collection of recipe books to try different proposals and not always resort to the same options. Among them stands out a toast that we can't get out of our heads and that we can't wait to make at home and enjoy as soon as possible.
If you are looking for a snack that is different from the usual options, this grilled squid toast with onion and pepper is a simple and quite complete alternative. The best thing is that it combines with many different proteins and has a moderate contribution of fats. Furthermore, it is prepared in just a few minutes.
The inspiration comes from the traditional chipirones a lo Pelayo, a typical dish of Basque cuisine that has already crossed the borders of the Basque Country thanks, among others, to chefs such as Karlos Arguiñano and Martín Berasategui, who have shared this recipe on numerous occasions with their public. The best thing is that it allows for different interpretations, like this version proposed by Angelita Alfaro, on a slice of bread.
The recipe step by step
The preparation begins with the garnish. We put a large onion, or two small ones, over low heat until it is well poached. Meanwhile, we cut the green peppers into strips and grill them. The squid, now cleaned and opened, are also grilled for a few minutes, ensuring that they are well browned on the outside.
With all the ingredients ready, it's time to assemble the toast. On a previously toasted slice of bread, spread a portion of onion and add the pepper strips. Ideally, it should be a loaf of village bread. Then we place the squid on top and finish with a few drops of raw extra virgin olive oil.
To give it the final touch, all you have to do is put the toasts in the oven for a couple of minutes at high temperature, or use the gratin function, until they are hot and lightly golden. Once we have this step ready, we would have finished this simple and delicious recipe for a snack of ten.
