My first boyfriend had an unforgiving summer ritual when we went on vacation to the beach: an aperitif with canned cockles and a squeeze of lemon. I've been replicating that gesture for 20 years, but I didn't know I was doing it wrong. Or at least not as well as it could do. According to Masterchef 3 winner Carlos Maldonado, a Michelin-starred chef at his Raíces restaurant, there is a better way to enhance the flavor of canned cockles by making a quick ceviche with them.
In the La Sexta program 'Más Vale Tarde', the chef prepared a very quick version of ceviche with a can of cockles and a few other ingredients to achieve a fresh, light and flavorful appetizer.
A “Michelin star” recipe at home: ceviche with canned cockles
To make this ceviche with a can of cockles, in addition to these (and of good quality), we need two or three tablespoons of lime juice, a tablespoon of chopped fresh cilantro, half a teaspoon of garlic powder and another half of cumin and salt. To give it an extra touch, the chef also uses yellow chili paste “to give it a spicy touch”, half a red onion and nuts, but these three are not essential.
What we are going to do is spice up the broth in which the cockles come, which will be the base of the recipe, so we take a bowl and add the broth from the can, the lime juice, the chopped cilantro, the red onion cut into fine julienne strips “which gives it an incredible roll” and half a teaspoon of yellow chili paste if we want it to have a spicy touch. Now we are going to add a little salt and stir to integrate everything. When we have it ready, we separate the solids with a spoon, which we add to the dried cockles. We cover it and store it in the refrigerator “so that it takes on flavor.”
Before serving, we add “the nuts we have at home, so that it has that point.” crunchy and fun. They can be walnuts, hazelnuts, pistachios…” The sauce that remains, that tasty seasoned broth, we add again at the last moment so that the nuts do not soften too much.
